We just never changed what was already right. The same machine since 1974, the same marble counter, the same opening hour. What changed is the bean: today we roast in house, every week.

Beans arrive on Tuesday and reach the cup on Friday. One lot of Brazil and Ethiopia, roasted lighter than most, so it never tastes burnt. You can watch it work through the open door.

The Faema is still the original. Dona Fernanda pulls the shot in 25 seconds without looking at the clock, and gets it right.
